Swiss Fondue

Ingredients:

1 clove garlic
30 ml (2 T) butter or margarine
45 ml (3 T) chopped onion
190 ml (3/4 cup) white wine**
500g sharp Cheddar cheese, grated
45 ml (3 T) cake flour
salt & pepper
pinch of grated nutmeg
30 ml (2 T brandy)(optional)

Toast, beef cubes, sausages, chicken nuggets, bacon
& cheese rolls etc.

Method:

1.  Rub the inside of a casserole with the crushed
garlic.  Melt the butter in the casserole and fry the
onion until slightly browned.

2.  Add the white wine ** and bring to the boil.

3.  Combine the cheese and flour and gradually add
tot he wine**, stirring constantly until the cheese has
melted.  Season with salt & pepper, and nutmeg.

4.  Add the brandy (optional) just before serving.

5.  Dip squares of toast on fondue forks into the
mixture which must be kept over a flame to keep it
liquid.

** I replace the wine with milk or chicken stock.
