SWEET & SOUR SAUCE

Ingredients:

1 onion or 2 cloves of garlic. (I use both)
1 green or red pepper
30 ml (2 T) Cooking oil
2 small carrots
125 ml (1/2 cup) canned pineapple syrup
125 ml (1/2 cup) vinegar
125 ml (1/2 cup) sweet wine
125 ml (1/2 cup) tomato puree or
15 ml (1 T) Soya Sauce
60 ml (4 T) brown sugar
30 to 45 ml (2 to 3 T) cornflour blended with a little water
250 ml (1 cup) canned pineapple chunks or rings
30 ml (2 T) preserved ginger, chopped
salt & pepper to taste

Method:

1.  Chop the onion.  Seed the green or red pepper and
slice into rings.

2.  Heat the oil in a saucepan and fry the onion, pepper
and finely chopped carrots until tender.

3.  Add the pineapple syrup, vinegar, wine, tomato
puree and sugar.  Simmer for 10 minutes, stirring
constantly.

4.  Stir in cornflour and cook for 2 minutes, stirring
constantly.

5.  Add the pineapple, ginger, salt and pepper.

6.  Excellent served with pork.
